A Holiday Recipe

Hi Everyone!

I changed my blog background again.  I wanted something festive for this season.  The time period from Thanksgiving to New Year’s Day is the most wonderful time of the year in my humble opinion!  It seems to bring out the best in everyone.
In a time where there are plenty of dinner parties and potlucks, I would like to share with you a recipe that I have that has been well liked every time I have prepared it.  Someone gave me this recipe about five years ago and I forgot all about it until recently when someone gave me some sweet potatoes.


What delicious dish am I referring to?  Sweet Potato Casserole!
Here is the recipe:

Sweet Potato Casserole
3 cups mashed sweet potatoes
1 cup evaporated milk
1 cup sugar
1 stick margarine, melted
2 eggs, beaten
2 teaspoons vanilla extract
Beat all together and pour into a greased 2-quart casserole dish.
1 cup brown sugar
1/2 cup plain flour
1/4 cup margarine, melted
1/2 cup chopped pecans
1 cup coconut
Mix topping until crumbly.  Sprinkle over potatoes and bake 30 to 40 minutes at 350 degrees.
Serves 6 to 8.

    Hi, I'm stopping by from SITS! I just wanted to share a bit of comment love.?

    This is my most favorite time of the year, too! Actually, I love the time from right around November 1st 'til the Epiphany on January 6th. And, honey, I absolutely LOVE Sweet Potato Soufflé! My sister makes it for all of our holiday get-togethers. It is one of our traditions. :0)
